    The undisputed star of the season. At its peak fat content, our Sanma glistens under the counter lights. The chef applies fine, intricate knife scoring before giving it a subtle sear, finishing with a hint of fresh ginger and scallion to balance the rich, bursting oils.


  • Hokkaido Kegani (Hairy Crab): 

    Sourced from the icy depths of Hokkaido. The sweet, delicate meat is meticulously hand-picked and folded into rich, velvety kani miso (crab brain paste), delivering a concentrated hit of ocean sweetness.


  • Hokkaido Murasaki Uni:
