What Makes Shima-aji (深海池魚) So Special?

Shima-aji translates to "Striped Jack" and lives in warm, deep ocean currents. Unlike standard horse mackerel (Aji), Shima-aji is much larger, smoother, and infinitely more refined.


To ensure our guests in Thonglor taste it at its absolute peak, we air-fly our Shima-aji from Japan every two days. This ensures that the flesh retains its pristine, transparent quality and signature bite.
